When is pancake day?
Well, everyday is pancake day right? But apparently there is an official day for pancakes and it is today! Yay! So let’s celebrate it with a delicious and healthy recipe, using only 2 ingredients for the epic pancakes – which by the way it is my favourite!
Curiosity about the origin of the Pancake Day
Pancake Day is always 40 days before Easter so the date moves but it will always be between February 3 and March 9. The date changes every year because Easter changes too in accordance with the first moon after the vernal equinox. Originally, the pancake recipes are thought to date back to the Pagan times as a way of using up eggs, flour and milk in one dish. Some Christians meanwhile believe that four ingredients in pancakes represent the four pillars of the Christian faith. That is flour for sustenance, eggs for creation, milk for purity and salt for wholesomeness.
Although, my recipe is not the traditional one and it is sweet pancake: all you need is just 2 eggs and 1 banana, mix all together using a blender and that is it, ready to cook! For toppings, I choose blueberries, peanut butter, honey and cinnamon for toppings and I simply loved it!
So here we go step by step:
- 1 banana
- 2 eggs
- In a container, add the banana and eggs and blend all, using a hand blender. If you don't have one, mash the banana with a fork, beat two eggs and combine all together until smooth.
- Set a medium frying pan over a low heat and carefully wipe it with some oiled kitchen paper. Pour the batter to the pan, forming small pancakes.
- Fry for 2-3 minutes until one side is golden and then flip your pancake over with a pan slice or palette knife - right time will be when the pancakes formed bubbles. Fry for 2-3 minutes until the other side is cooked and repeat this process for each of your pancakes.
